Lavender Chocolate Mousse

You will need:

• 16 oz. Heavy Cream
• 2 tsp culinary lavender
• 4 T cocoa
• 1 tsp instant coffee
• 2 T confectioner’s sugar
• 1 T Bourbon *optional
• 1 T Crème de cocoa *optional
• 1 tsp vanilla extract

Heat cream in a saucepan till steaming, stirring frequently.  Add lavender, stir and let steep at least 20 minutes. Strain lavender, cover cream and refrigerate till cold.  Add other ingredients to cold cream, whisking till well blended. Beat till light and frothy with a mixer and spoon into cups.
