Lavender Artichoke Frittata

Ingredients:

  • 8 ozs artichokes (frozen)
  • 2 tbsps olive oil
  • 2 purple onion (smalls, chopped)
  • 4 garlic cloves (minced)
  • 1/2 lb mushrooms (sliced)
  • 8 large eggs
  • 1/2 cup dry bread crumbs (fine)
  • 1/4 tsp ground black pepper
  • 4 cups shredded sharp cheddar cheese
  • 2 tsps lavender gourmet seasoning

Directions
TOTAL TIME: 1 hr Pre-heat oven to 325° F.
  1. Use non-stick cooking spray or line with parchment paper, a 9x13 baking dish.
  2. Sauté artichoke hearts in olive oil for about 5 minutes, in a large skillet, over medium heat.
  3. Add onion, garlic and mushrooms, cook until onions are soft.
  4. In a large bowl, beat eggs with a fork.
  5. Stir in bread crumbs, pepper and lavender gourmet seasoning.
  6. Stir in the cheese and artichoke mixture.
  7. Pour into the baking dish and spread evenly.
  8. Bake for 30 minutes, or until top is firm to the touch.
